2 c. persimmon pulp
2 c. sugar
2 eggs, slightly beaten
1 1/2 c. buttermilk
1 t. soda
1 1/2 c. flour
1 t. baking powder
1 t. cinnamon
1/4 t. salt
1/2 c. heavy cream
1/4 c. butter, melted & cooled
1 t. vanilla
Mix well:
- persimmon pulp
- sugar
- eggs, slightly beaten
Stir ‘til no foam:
- buttermilk
- soda
Add to other mixture, then add:
- flour
- baking powder
- cinnamon
- salt
- heavy cream
- butter, melted & cooled
- vanilla
Cook at 350 45 min. in 13x9x2 casserole.
Serve warm with whipped cream.
Served every Thanksgiving and Christmas Dinner in our family.
